Du har helt ret. man-siden til stdint.h fortæller det meste.

Som jeg så ser det, så bør man egentlig holde sig fra at bruge int. Det er
langt mere sikkert at bruge en af de typer der er i stdint.h.

Skal noget gemmes i en fil, så uint16_t.

Skal man bare bruge en hurtig integer med mindst 16 bit, så
uint_fast16_t.

En måske pladsbesparende 16 bit, så brug uint_least16_t. Jeg tror man
ville bruge denne i et array eller så, ellers kan en "fast" vel gøre det.

På en 64bit bruger en uint_fast16_t 8 bytes. Så det er åbentbart hurtigere
end at bruge en 2bytes type.
